If i develop a team of artist and build a portfolio of my idea to present to the company... My next question is how do i protect my ideas dealing with a potentialy already patented product from the company and those that I talk to. Is great documentation enough or is there other ways of protecting my idea in respects to my scenario.

The last thing an inventor or entrepreneur wants is to have their idea stolen. If your idea qualifies for either a patent or trademark, your first step before even hiring a team should be to file for protection.
Great documentation is highly important. You'll want to keep as detailed of records as possible to allow anyone to see how the idea has evolved. Draw sketches, take picture, etc...
Before you even talk to anyone about your idea, be sure your patents and trademark applications are filed. Then again, keep detailed documentation of how, why and to whom you shared your idea with.
