Can anyone offer a recommendation for a host wiki service that would work well for a small business?

Excellent choice with seeking a hosted solution.
Have you looked into PBwiki's hosted Small Business Edition solution?
PBwiki's hosted Small Business Edition Solution offers the following:
* Full Access Controls
* 10GB Storage Space (new! Increased from 5GB)
* No Ads
* Unlimited Pages
* Enterprise-Grade Encryption
* Full data backups
* Hideable/Lockable Pages
* Priority email support within 24 hours
* Export any page to PDF and HTML
* Single Sign On
PBwiki will cost you the following:
* 1-5 users - $500/year
* 6-15 users - $1200/year
* 16-75 users - $3500/year
The nice thing is that you can signup for a wiki for free to evaluate the company. If you end up liking the company, you can later upgrade to the small business edition.
Take a look and let me know what you think. There are other options out there as well.
