I am coordinating a fundraiser for a family who's father has been stricken with ALS. How do we set up a Trust for the children without affecting aid?

Our friend was stricken diagnossed with ALS in December. He is only 32 and has 2 small childdren 7 & 2. Since he is now in a wheel chair his wife has to go out to work to try and put food on their table. I have organized a fundraiser on June 1st to raise funds to help this family. There is a benefactor that has pledged to match any and all funds raised. Unfortunately, in order for this family to get any form of governmental assistance they can not have much in any form of savings. We would like to open a trust fund for the children to help with college. How do we do this without affecting the families assistance that they so despirately need right now?
